Grapefruit Cake

1-1/2 cups sugar
1 Tbsp. grapefruit rind, grated
3/4 cup butter
3 lg. eggs
3 cups flour
3/4 tsp. salt
3-1/2 Tbsp. baking powder
1/4 tsp. baking soda
1 cup grapefruit juice
1 Tbsp. orange zest
1 Tbsp. lemon zest
1 Tbsp. lime zest
Preheat oven to 350°. Grease and flour two 9-inch cake pans.

Cream butter and sugar together and add grapefruit rind; mix well. Add eggs one at a time and beat well.

Sift dry ingredients together and alternate adding dry ingredients and grapefruit juice to creamed butter and sugar mixture, ending with dry ingredients. 

Divide batter evenly between pans, bake for 30 minutes. 

Zest orange, grapefruit, lemon, and lime in long strips. Place in ice water to curl. 

Cool cake in pan for ten minutes before turning out onto racks. Let cool completely before frosting with Fluffy Cream Cheese Frosting. Garnish with zest.
